Helen 'Missy' Eubank

December 23, 1928 — May 2, 2017

Helen "Missy" J. Eubank, 88, of Leawood, Kansas passed away May 2, 2017 after complications from a stroke. Born December 23, 1928 in Wichita, Kansas to Roscoe and Christine Johnson. A graduate of William Woods Junior College in Fulton, MO followed by a BS from University of Kansas in Home Economics, where she was a member of Gamma Phi Beta, and post-graduate work at Fontbonne College (now University) in St. Louis, Missouri. She married Dr. Bill Eubank, June 21, 1953 while working for the Gas Service Company of Kansas City, subsequently moving to Gardner Advertising in St. Louis where she worked in early TV advertising, recipe development and cooking demonstrations. The couple returned to Kansas City where they raised three children in the Brookside community. Missy was indefatigable throughout our childhood involving herself in leadership roles with PTA, Cub Scouts, Girl Scouts and a myriad of fundraising projects. She later put her culinary skills to work with the Nelson Art Gallerys cookbook "Culinary Masterpieces" and contributed to the Kappa Alpha Theta Cookbook all while keeping everyone at home well fed and prepped for school or work. While she never learned to swim (making family canoe trips a bit exciting) she learned to play tennis and golf, even collecting a couple of Holes in One along the way. She would have been the last to claim status as an outdoorsman, yet hiked across the Continental Divide three times in Colorado and once in Wyoming. A go-getter at 5 feet and scant 100 lbs, Missy was also involved with the Philharmonic League, the Musettes of the Kansas City Museum, Service League of Research Medical Center, member of the Westport Chapter - Daughters of the American Revolution, the Ladies Aid Society, The John Wornall House and Mission Hills Country Club. Most recently she was instrumental in organizing a traveling neighborhood wine party dubbed appropriately, "The Winers". Missy is survived by her husband Dr. Bill Eubank of 63 years and three children; Chris Eubank (Susan), Lisa Glassman (Steve), and Marcie Altomare (Robert), 7 grandchildren and 2 great grandchildren. She is also survived by 2 nephews, Clint Johnson of Boise, Idaho and Martin Johnson (Maria) and family of Woodside, California. She was preceded in death by her older brother David A. Johnson. The family wishes to thank the staff at Care Haven Homes for their compassionate care and support.
